We are BIG oatmeal fans in this house, and we have tried all sorts of interesting oatmeal combinations. Last week we tried a brand new one: blueberry cobbler oatmeal. It was a hit with the adults as well as the kids. Yum! Lilah especially loved it because it was her favorite color — purple!
Let me start by saying that this is less of a recipe and more of a how to post. I am not the kind of cook who measures and times…perhaps that makes me not a cook at all. Regardless, this was too good not to share!
First, start off by making a blueberry cobbler. Eat half of it while it’s hot. With ice cream is best!
Resist the urge to have a
second third helping, and stick the other half in the refrigerator for later. In the morning, throw the remaining blueberry cobbler in the blender. Add milk to get it to a blendable consistency. It’ll be a lovely deep purple once it’s ready!
Heat the blueberry cobbler puree by your preferred method. I heated it in the microwave, stirring every once in a while until it was heated through.
Meanwhile, make plain oatmeal by whatever method you prefer.
Once the oatmeal is cooked, stir in your blueberry cobbler puree to taste and enjoy! If you’re used to sweeter oatmeal, you may want to add a little more sweetener of your choice, but this was perfect for us.
We added an extra splash of milk. Yum! This would be the perfect dish to serve for breakfast on a day focused on the color purple! 🙂
