Here’s an easy way to jazz up your little one’s pancakes for Halloween: make them some Jack O’ Lantern Pancakes! These “pumpkin” pancakes can make a healthy alternative to candy while remaining festive. My kids definitely saw these as a treat!
We had leftover pancakes from breakfast one morning, so later I whipped up these Jack O’ Lantern pancakes for the kids as a special Halloween surprise! We use Great Harvest’s Whole Wheat pancake mix to make our pancakes. Love it!!
Here’s what I used to make the pumpkin faces, but my advice is to just get inventive with whatever you already have on hand:
*Pumpkin stem — a dried apricot, shaped with scissors
*Eyes — Banana slices and raisins
*Nose — 3 semi-sweet chocolate chips
*Mouth — Dried coconut shavings
*I also drizzled some cinnamon whipped topping leftover from making a homemade pumpkin pie at the bottom for them.
My 3 year old especially thought they were fun!
Another option would be to set out the ingredients and let your child decorate their own pumpkin face pancakes! You can make them as healthy or unhealthy as you like. Have fun!!
